Surprisingly delicious meal made with (bagged) Dole poppy seed chopped salad (pepita, cranberry, kale, brussel sprout etc) I added some fresh tomato and a (frozen from box) Hot Dang grain burger, southwest burger.

Strawberry salad

Sweet and Smoky Spiced Salmon

Sweet and Smoky Spiced Salmon with dijonnaise Potato Salad and Green Beans.  This was my firday afternoon delivery recipe from Blue Apron.  Easy to make and salmon has become a huge hit with the picky 9 yr old.  The potato salad with the fresh garlic was SPICY (too spicy for the kids) but... WHO CARES, it was awesome.  I will reek of garlic for day and days and it was worth it.  And who doesn't like green beans!  Blanched so still crispy with a shallot lemon olive oil mix tossed on.  Another really enjoyable Blue Apron meal!

Kato Sushi in Kansas City. Rolls on the platter Spicy Tuna, Las Vegas, Caterpillar, Rock and Roll, Spider and Tiger (wrapped with cucumber) in the bowl.  Good stuff with a Lychee Martini and Mai Tais.

Mediterranean Meatloaf pizza??

Mediterranean Meatloaf pizza?? Meatloaf Nachos? Deconstructed meatloaf? Not really sure what to call it... my family likes "build your own" meals so this is what happens when the ingredients are just put on the table.  I made a simple meatloaf (meat, egg, breadcrumb) and added sundried tomato, feta, fresh chopped basil, oregano and garlic into the mix.  Fried Pitas and served with hummus, arugula, a fresh veggie mix  (cucumber, tomato, onion, olive oil, lemon juice, salt and pepper) and sprinkled feta all over top.

Patriotic Quiche!

Another Blue Apron meal. Arugula salad (only thing I changes is that I added crutons).  The quice was red (red onion), white (ricotta) and blue (blue potato) for the forth of July.  Teenager loved it, had good flavor but the blue potato was not super appealing color wise (re:grey is not a good food color).  I would totally make again with russet or yukon gold potato.

Chestnut Spread

Chestnut spread (umm, like it sounds) or "crème de marrons" is a French classic made of chestnuts, confectionery syrup, sugar and vanilla.  Tastes like slightly thicker grainier honey. We tried it alone and on shortbread.  Interesting but I wouldn't seek it out. Suggestions are to eat on crepes or with ice cream.

My EXTREMELY finicky eater ate every bite of dinner and the rest of the fam loved it!!  I'm ordering a big bottle along with their veracha sauce and katsup!!
