I always double soup recipes and freeze the rest (all this PLUS what we had for dinner!)
I used this recipe except I used Chicken stock in place of the water, I beefed up the oregano, basil and garlic because I love all three, and I diced and crisped up about a lb. of chicken andouille sausage and added near the end.

Couldn't decide on a snack so everyone picked one. The cheeseburger sliders mentioned in the post below (they were pretty good, I didn't pass out from joy but I may make again), cookies, buffalo chicken dip, sausage meatballs and pigs in a blanket.

Recipe was SO SO HOT! I added a whole extra can of coconut milk and a couple Tbs of sugar and it still cleared my sinuses. Made great leftovers for lunch today.
